Heat 4 cups stock to a simmer. Sauté 2 tsp garlic, 1/2 cup onion in 1 TBSP oil for 3 minutes, add 1 cup arborio rice, cook 1 minute, add 1/2 cup white wine. Ladle in hot stock one cup at a time, stirring constantly on low heat until rice is cooked. Stir in 2 TBSP butter, 1/2 cup parmesan, and season to taste.
