Gourmet Bean Blend

French navy beans, Small red beans, Pinto beans, Black beans, yellow peas, Green peas, Lentils.

Rinse beans. Combine beans, a large pinch of salt and water to cover beans by 4 inches in a large pot over high heat. Bring to a boil, then simmer for 1-1/2 to 2 hours or until tender, skimming off any foam that develops. Add more water if necessary to keep beans submerged.
